500g (l lb) kale or some other greens such as spinach
2 tablespoons oil
1-2 onion, chopped
1-4 tomatoes, peeled and chopped
1 green pepper, chopped
Leftover meat
salt and pepper to taste
Heat oil in a large frying pan. Fry onions until soft. Add tomatoes, green pepper and leftover meats, if you have any. Cook together until well heated. Add spinach and cook over low heat for 20-30 minutes until mixture is well blended. Season to taste. Serves 4.
